Really Easy Pasta Sauce

This is going to sound so middle class but here goes….

I usually order my Ocado shop to arrive on a Monday but what with the Bank Holiday and all that I forgot to do it. When I went to order it yesterday there were (shock horror) no deliveries meaning that it’s not arriving until today.

In essence what I’m saying is that I’m a lazy bugger who hates going to the actual supermarket and I don’t know how I’d function without my weekly Ocado delivery. (I’ve tried all the others but nothing comes close! Asda was by far the worst fyi)

Anyway, to cut a long story short, we had bugger all for dinner last night, so I had to throw something together and being a pretty awful cook, I’m proud to say that I produced something easy, healthy and really delicious:

Upfront Mama’s Quick and Easy Pasta Sauce:

You’ll need:

Lardons

Frozen diced onion *

Frozen chopped garlic

Frozen Spinach

Cherry Tomatoes

French beans

Sweetcorn

Tomato Puree

Italian Herbs

Method:

Fry your lardons with the diced onions and a bit of garlic. Then add four cubes of frozen spinach. When everything is sizzling away shove in some chopped green beans and then your sweetcorn, tomatoes and a good squeeze of tomato puree.  Sprinkle with the herbs and season. Fry off, stir into your pasta and enjoy your vegetable filled bowl of yumminess. Add cheese.

We decided to eat early last night and tucked into our pasta while Pops watched her pre bath-time dose of Peppa Pig. She is honestly like a small dog. The way that she came up to me with big wide eyes, begging to try our dinner was cheeky but ridiculously cute. Anyway, it was a hit so I’ll be making it for her as well.

* I REALLY recommend stocking your freezer with frozen veg. Frozen onion and garlic save me SO much time when cooking.
